Why wouldn't you want watery chili though? That's basically soup.

My buddy actually calls that "goulash" and I still haven't forgiven him for it. Next thing you know people are gonna be dipping grilled cheese in it and calling it Italian wedding soup.

Jump right in and tell you to check your can opener. I spent a month wondering why my chili was always watery until I noticed the little tabs on the lid weren't breaking the seal right. Turns out my cheap opener was bending the rim instead of cutting it clean, letting extra liquid from the canning process leak out during storage. Switched to a better opener and suddenly my chili was thick and normal again.
