Warning: I thought canned corn was mush until I tried it at a taco stand in San Antonio
Last month I grabbed lunch at a little taco place off Zarzamora Street in San Antonio and the street corn special was made with canned corn, which I almost skipped. The cook dumped a can into a hot dry pan for about 5 minutes until the edges got brown and toasty, then squeezed lime and crumbled cotija on top. I always figured canned corn stayed soggy no matter what, but that dark char changed the whole texture. Now I keep 4 cans in the pantry and do the same trick at home for tacos and bowls. Does anyone else have a canned veg that gets way better with a hard sear?
