I swore canned beans were mushy garbage. Then a $0.89 can proved me wrong.
For years I skipped canned beans because the ones from a can always seemed like paste to me. A neighbor in Tulsa handed me a can of black beans and said just rinse them good and toss them in a hot pan with cumin and lime. Ten minutes later I had a filling that beat my slow soaked version, and it cost under a dollar. So what am I actually gaining by soaking dried beans overnight anymore?
That bit about rinsing them good is the whole trick honestly. I used to just dump the can straight in the pot and wonder why it tasted like nothing, but once I started rinsing and then frying them with some onion and garlic, it was a totally different thing. I still keep a bag of dried around for when I have time, but the can gets me dinner on a Tuesday, so I'm not mad at it.
