Can we talk about the first time a good chef knife actually paid off
Ngl I spent $150 on a decent Japanese knife about 5 years ago and it still blows my mind how much easier prep is now. That thing saved me from a nasty onion cut last month when my old blade slipped. Has anyone else had a knife that just felt like home after a rough service?

It's not just about avoiding cuts though that part matters a lot when you're slicing fast after a long shift. The confidence you get from a blade that does exactly what you tell it to is something else. Dull knives make you work harder and slower, and that's when accidents happen. Plus the onion thing is real, a sharp knife glides right through without tearing you up. Don't knock it til you try it.

Totally feel you on that. Nothing worse than a dull blade trying to roll through an onion.
