Chopped my own herbs vs. buying pre-minced garlic for a week straight

I always thought saving 10 minutes on prep wasn't worth the jarred stuff, but last Tuesday I had 40 covers and my knife hand was cramping. Tried the pre-minced from the store and honestly, the taste difference on the flatbreads was barely noticeable. Has anyone else caved on this for busy nights?

The pre-minced is just garlic in suspension, salt and acid hide any real differences.

WAIT, "garlic in suspension"? That sounds SO gross! Like it's some kind of chemical sludge floating around in a jar. You're telling me all that pre-minced stuff is just garlic bits hanging out in salt and acid soup? I never thought of it that way but now I can't unsee it. That really makes me want to check the label on my own jar because I've been using that stuff for years without thinking twice.
