Found a better way to sear without setting off the smoke alarm
I used to crank the heat up for searing, but my kitchen would fill with smoke. Switching to a lower temperature actually gives a more even crust. What do you use to keep searing clean and effective?

Check the steak's temp, not the clock.

Wait, so you're saying lower heat gives a better crust? I always thought you needed blast furnace levels for that. How do you know when it's done without burning it? And what about the mayo trick, does that change the flavor at all?

Have you heard about using a mayo coat for searing? I read it helps with browning without needing super high heat.

Last Tuesday I coated a ribeye with mayo like some online guides say. That stuff left a weird film on the meat and the taste was off, not like proper searing. @amy_west, the mayo trick might help with browning but it sacrifices the real beef flavor we want. High heat and dry meat still give the best crust without any gimmicks. I burned a steak once learning the timing, but now I get it right every time without mayo.
