Hit 200 covers solo on a Saturday night - finally get the hype about prep stations
I always thought prepping extra mise was just a waste of time, but after that 200 cover rush I was actually grabbing backups without breaking stride. Have any of you had a number that made you rethink your whole setup?

Prep day saves your life. @foster.jordan hit it spot on. I do all my mise the night before for big brunches. Get your station dialed in. Line the reach-in with backups on backup. Saves you from the ticket machine death spiral. No brainer for those 300 cover shifts.

But what nobody talks about is how your prep needs change depending on your station. Like when I was on saute, I would prep way more butter and wine than I thought because those pans eat it up. Then I moved to the cold side and realized I needed way less of that stuff but way more mise for 50 different salads. Your whole system has to flex based on what station you're on that week, a one size fits all prep plan will screw you over every time.
