Hot take: my new sous vide machine flooded the prep kitchen last Thursday

I was doing a 48 hour short rib cook for a private party of 40, and the unit's seal failed overnight. Had to pivot to braising in the combi oven at 5 AM to save the dish. Anyone have a brand they actually trust for long cooks?

Ever think about the smoke alarm situation? Starting a huge cook that late means you're up all night babysitting it. My neighbor tried that and set off every alarm in his building at 3 AM. The fire department showed up. That's a party story you don't want.

What could possibly go wrong, @king.eric? I figured the guests would love some extra crispy, completely blackened brisket. It's all about that last-minute panic cooking, right?
