My old boss in Cleveland told me to never salt mushrooms until after they're seared.

He said it would make them boil in their own water. I followed that for years until I tried salting them right away at my new spot. They actually sear better and faster, getting a deeper color in about 4 minutes. Has anyone else found that old rule to be wrong?

Man, that's so true. I started salting early and it totally changed my mushroom game. That old advice just doesn't hold up.

Right? It's like that salt pulls the moisture to the surface so it can evaporate faster, letting them brown up quick.
