PSA: I used to chop onions with a dull chef's knife (why did I do that to myself for 5 years?)
Last Saturday I finally caved and bought a proper sharpener at a shop in Austin, and now I can chop through an onion in about 10 seconds without crying, has anyone else dealt with the stubborn habit of using a dull blade forever?

Sharp knives are non-negotiable once you try one. That 10-second onion trick is life changing actually. Dull blades just make cooking harder for no reason.

Read somewhere that chefs sharpen their knives on the bottom of a coffee mug in a pinch. Tried it on my dull house knife and it actually made a difference before I got it properly done.

My buddy Dave used to brag about how his dollar store knife "got the job done." I watched him fight a tomato for five minutes once, it was genuinely sad. He finally borrowed my nice chef's knife to prep for a party and diced a whole bag of onions in under a minute without crying once. He texted me that night like "I get it now, I'm never going back." He bought a proper knife the next weekend and says it's his favorite possession now.

Oh totally! It's wild how we'll put up with something being harder than it needs to be for years just because we're used to it. I feel like that happens with so many things in life, from kitchen tools to old routines, until one day you finally upgrade and wonder why you waited so long.
