Saw a line cook in Chicago use a fish spatula for eggs and it changed everything

Watched a guy at this diner near Wrigley last week flip over-easy eggs with a fish spatula in one smooth motion, no tearing the yolk, and after trying it myself for 3 days I dont think I'm ever going back to a normal turner - has anyone else made that switch?

Swapped mine out last year after a chef buddy showed me the same thing and honestly it was like learning to cook all over again. The thin, flexible metal slides right under the yolk without any of the sticking or tearing you get with a thick plastic turner. It takes a few tries to get the hang of the wrist flick for flipping, but once you do, over-easy eggs come out perfect every single time. Now I use the fish spatula for everything from pancakes to grilled cheese, it's by far the best kitchen tool I never knew I needed.

Wait, are you saying you actually had to relearn how to flip things with it... like the thinner metal changes your timing that much? I've been using the same thick nylon turner for like six years and I'm scared to switch because I finally got my omelets down. But the sticking you mentioned with plastic is exactly what drives me nuts... especially when the eggs tear and you get that weird scrambled mess instead of a clean fold. Does the flexible metal actually hold up to grilled cheese without bending out of shape over time? I'm half tempted to grab one now but I'd hate to spend the money and then hate the learning curve.
