Screwed up the reduction sauce for fifty covers.

I was making a red wine reduction for the beef dish. Got distracted and let it reduce too much, now it's bitter and thick. Had to toss it and rush to make a new batch. Service starts in twenty minutes.

Ever have one of those days where you just can't get your head in the game? I was trying to make a simple pan sauce at home last week and completely spaced out... ended up burning the garlic to a crisp. The whole kitchen smelled like regret for hours.

Right? Plenty of time if everything goes perfect, which it never does.

Oh I totally used to think that. Then I had to actually do it myself last week and it was a mess. You really need the full half hour.
