Spent $150 on a good deboning knife and it paid for itself in two weeks
I used to fight with a $20 knife from the restaurant supply store for years, thinking it was good enough. Finally bought a proper Victorinox curved boning knife and the difference in how fast I can break down chickens is ridiculous. Has anyone else had that moment where spending on one tool completely changed your prep workflow?

Why spend that much on one specific knife when a $40 Victorinox does the same thing? I've had mine for years and it breaks down chickens just as fast as any $150 blade. The real game changer for me was learning to sharpen my own knives, not the price tag. What makes you think the extra cost actually saves you time versus just getting better with a mid-range tool?
