I always preferred gas stoves for their control. A week cooking over charcoal in Morocco showed me a level of flavor that's just UNMATCHED. Has a trip ever convinced you to switch up your cooking tools?
Totally worth it! The smoky flavor you get is just unbeatable, and once you get into a rhythm, it's not that much extra work. After a couple days, lighting the chimney and managing the fire feels normal. Gas is easier, but it just doesn't taste the same.
Oh man, @aaron854 is right about that rhythm thing. My first few charcoal tries were a disaster though (I definitely cremated some burgers before getting the hang of air flow). The flavor is so good it's worth eating a few hockey pucks along the way.
