Honestly, I feel this so hard. It took me a solid six months of a chef going "no, stop, don't hold it like a caveman" before I finally got it. Now I can't even look at a knife without my hand automatically doing the pinch thing. It's like my fingers just know what to do now. But man, I still remember that first week where I was definitely about to chop my thumb off trying to get the grip right. Would've been a pretty embarrassing way to end a shift.

Oh man. A sous chef told me the same thing back when I was a line cook. He was right too. I was holding the knife like a baseball bat with my index finger on top of the blade. Switching to the pinch grip was a game changer. Felt weird for a week but then I couldn't go back.
