The dishwasher at my spot in Dallas told me to taste the pasta water and I still think about it
He pulled me aside during a Friday rush a few months back, made me sip the water I was about to drain, and just said 'that's your sauce base, chef, why you throwing away the flavor,' and now I salt it way earlier and taste it every single time.
