My first pour over was a disaster at 6am in my Denver kitchen in January 2021, but a guy at a local cafe told me something I still use today
He said the water temp matters more than the grind, and after testing 195 vs 205 on the same beans I finally get why my cups tasted flat for a month.

Water temp matters, sure, but 10 degrees making or breaking your coffee? Sounds like you just found a grind that was off and blamed the temp instead.
