My neighbor the barista told me I was choking my pour-over with too fine a grind

I was doing 15 clicks on my Encore for a single cup and he said go coarser to like 20 clicks and the drawdown time went from 4 minutes to 2:30 and the bitterness just disappeared so has anyone else had to totally retune their grind size based on someone's outside feedback?

Wait, 15 clicks? Bro, 4 minute drawdown time? I thought I was being extra with my settings but that's wild. Had to re-read that twice.

I dunno though... I read his setup and I'm running 12 clicks with a 3 minute drawdown on a 12/6 bar. It's tight but it's not that crazy if you've been watching the same pairs for a while. I mean sure it's aggressive but I've seen people go 20 clicks on a 2 minute chart. That's where I start raising an eyebrow.

Nodded my head reading this. I had a shop owner watch me brew once and he told me to go way coarser than I ever would've tried on my own, and it completely fixed my cups.
