I finally got a stubborn hydraulic fitting on a dredge pump in Galveston to seal after fighting it for nearly 8 hours.
What's your go-to method for dealing with a fitting that just won't seat right in cold, murky water?

Working in that Galveston muck changes the game. I've found cussing, like logan561 said, just wastes energy you need for the real fix. My method is to pull the fitting, clean every thread with a brass brush and fresh solvent, even in the cold water. Then I use a light touch with the right thread sealant, not the paste but the liquid kind that sets. Hand-tighten first, feel for that smooth turn, then just a quarter turn with the wrench. Forcing it always makes it worse.

Nah, I'm with logan on this one. Sometimes a good cuss is the only thing that gets you through cleaning those threads.
