Just tried a thermal pad swap on a Gigabyte 3080 that went sideways
Customer brought in the card saying it was overheating, so I replaced the stock thermal pads with some 2mm Gelid Solutions ones. After the swap, the memory temps were great but the GPU core started hitting 90C under load in FurMark. Turns out the pad thickness was wrong for the core contact, and I had to redo it with a 1.5mm pad. Has anyone else run into this with that specific card model?

Yeah, that "pad thickness was wrong for the core contact" is such a classic headache. It's crazy how a fraction of a millimeter can completely ruin the thermal performance. Been there with other cards, and it's always a frustrating redo.

Tell me about it, I've measured thrice and still messed up.

Honestly, stacking a 0.5mm pad on top of the 1.5mm one worked for me when I had that same issue, @nathan100.
