Rant: I spent $22 on those fancy pre-cut veggie trays for meal prep and I feel like such a sucker
I do my big Sunday cook every week, right, and I got lazy three weeks back and grabbed two of those pre-cut veggie trays at the store near my place in Sacramento instead of chopping my own onions and peppers. Twenty-two dollars for maybe four cups of vegetables that were already going soft on the bottom layer. By Wednesday the peppers were slimy and I had to toss half of them, so that tray of soup I batch cooked basically cost me double what it should have. My grandma ran a diner for 30 years and she would have smacked me for that one. A whole bag of onions is like three bucks and a few bell peppers are five, and they last way longer in the drawer than those trays do in the fridge. Now I just spend 20 minutes with a knife and a podcast on Sunday and I'm set for the whole week of big pot meals. Has anyone found a pre-cut shortcut that actually holds up past day three, or am I just stuck chopping forever?
I used to grab those trays every single week and told myself it was worth it for the time saved. Then one Sunday I actually timed myself chopping two onions, a bell pepper, and a bag of carrots, and it took eleven minutes. Eleven minutes, and the whole thing cost me maybe six bucks. The tray veggies never lasted past Tuesday anyway, so I was buying them twice. Once I did the math on how many trays I'd bought over a year, it wasn't even close. Now the only pre-cut thing I'll touch is a bag of coleslaw mix when I'm making stir fry that same night, and even that's pushing it.
