Showerthought: I used to laugh at 'gluten free' on things like rice cakes
My friend with celiac got really sick after eating some 'gluten free' corn chips from a new brand. We checked the label and it said 'made in a facility that also processes wheat'. That tiny line convinced me the claim is basically useless for people who actually need it. But my other friend says the label is still helpful for people just trying to cut back. What's the point of a health claim if it doesn't mean the product is safe for everyone it's marketed to?

That "tiny line" is the whole point though. It's a warning for people with celiac, not a promise. The "gluten free" claim is for the product itself, not the factory.

Totally agree, it's such a gamble. My cousin had the same thing happen with some crackers, felt awful for days. Makes you check every single label twice now, right?

Yeah, that "warning for people with celiac" line hits home. My friend got so sick from a "gluten free" cookie that had that exact warning. It really shows how much you have to trust the label, not just the big print. That tiny line is doing a lot of heavy lifting.
