The 3-year old jar of pickled eggs in my buddy's fridge should be a crime scene

I was over at Mike's place last Saturday grabbing a beer and he pulls out this jar of pickled eggs from 2021 with the liquid looking like swamp water. He claimed they were still good because vinegar preserves everything. I told him that's the same excuse my uncle used before he ended up in the ER with food poisoning last year. Has anyone else had to convince a friend that expiration dates actually mean something?

Read a study once that said pickled eggs can technically last a year in the fridge if they're made right, but three years is just asking for trouble. I heard about a guy who got botulism from some homemade pickled eggs his grandma kept in the basement for like five years, and he was sick for months. Swamp water is basically a red flag your buddy is ignoring, because that means bacteria is already having a party in there. Some things are just not worth the risk, and a jar from 2021 is definitely one of them.

My uncle used to keep a jar of pickled eggs in his garage fridge for like four years just to see what would happen. Man opened it up one day and the smell alone sent my cousin running out the back door gagging. To this day nobody in my family will touch a pickled egg, and I honestly can't blame them after that.
