Ive been heating my syrup wrong for 10 years
I always nuked my Grade A dark amber in the microwave for 30 seconds before pouring it on pancakes. Last week my buddy from Vermont saw me do it and said I was basically boiling off all the flavor compounds. He showed me to just put the bottle in hot tap water for 5 minutes instead. Anyone else make this mistake or am I the only one?

Oh man I read that microwaving syrup actually changes the molecular structure or something like that.

Read somewhere that microwaving breaks down the sucrose molecules into glucose and fructose. It's basically the same thing that happens when you heat syrup on the stove, just way faster. The molecular change is real, but it's just simple chemistry, not some weird scary thing. People act like microwaves are poison but they just heat things up by vibrating water molecules. If you're worried about losing flavor or texture, that's a different story. But the whole "molecular structure" thing is overblown.

The thing about microwaving syrup is that it can also create hotspots that make the sugar crystallize unevenly. That's where you run into real problems, like getting grainy syrup or weird texture issues. If you're just warming up a small amount for pancakes, it's probably fine, but for larger batches or anything you want to keep smooth, the stove gives you more control. Plus, heating it too fast can actually scorch the sugars and give it a burnt taste. So while the molecular change itself isn't anything to stress over, the way you heat it matters a lot for the final result.
