Overheard a cashier at Aldi telling a customer that 'amber color' doesn't mean anything anymore
I was grabbing groceries last Tuesday and this cashier was talking to an older lady about syrup. She said the grading system changed back in 2014 and most people still dont know. The lady was asking why one bottle was darker than the other and the cashier basically explained it's all about taste now not color. I always thought darker meant better but she said it just means the sap was boiled longer and the flavor is stronger. I grabbed a bottle of the dark stuff and honestly it was way better on my pancakes than the light stuff I used to buy. Has anyone else found that the darker syrups taste better or is it just me?

Ha! So all those years I felt superior with my dark maple syrup was just me being a basic pancake snob. Guess the Amber Color Police have been disbanded.

Point out that the whole syrup color debate overlooks the real factor which is the tree itself. Different maple species, like sugar versus red maple, have naturally different sugar contents that affect color and flavor way more than processing. So maybe the dark syrup lovers were just tapping the wrong trees, not making a style choice.

Drank my way through half a gallon of 'fancy' grade before realizing I just liked the cheap stuff better.
