Unpopular opinion: I was meal prepping wrong for 2 years until a coworker saw my chicken and said 'that's why it tastes like cardboard'
I was baking all my chicken breast at 400 for 40 min like some Pinterest board told me. She showed me how to brine it for 20 min in salt water and now I actually look forward to Monday lunch. Anyone else have a cooking hack that made you feel stupid for not knowing it?

The 400 for 40 minutes got me too. Dry and sad every single time. Brining changed my whole chicken game, now I throw some brown sugar and soy sauce in the salt water for extra flavor. Felt like such a dope when I figured out you can just season the water instead of trying to force flavor into dry meat later.

The brown sugar in the brine is the game changer nobody talks about enough. That little bit of sweetness balances the salt perfectly and gives the skin a nice color.

Two years of eating hockey pucks here, man. I was so proud of myself for "saving time" with Sunday meal prep and my coworkers were just silently judging me every day at 12pm. The soy sauce in the brine tip just blew my mind, I've been doing plain salt water like a caveman. Now I feel like a kitchen genius for basically just soaking meat in salty brown liquid before cooking it. Pinterest really set us up for failure with that 400 for 40 nonsense.
