Finally caved and bought a Meater+ probe for like $100
I was always the guy checking the pit every 20 minutes and messing up the temp, lol. This thing lets me watch the internal temp from my phone while I'm inside, and my last brisket in Austin was the most even cook I've ever had. Anyone else use one of these and have tips for the ambient temp sensor?

lol finally joining the 21st century huh? Sounds like it paid off though, that brisket is proof enough for me. Just don't put the ambient sensor too close to the firebox unless you want your phone yelling at you every 5 minutes.
