Got schooled on brisket by a guy at a gas station in Lockhart
I was filling up on the way to a cookoff last fall and saw a guy with a trailer smoker. He told me to stop wrapping my brisket in paper at the stall. He said, 'Just let it ride, the bark needs to breathe.' I tried it on my next cook, left it unwrapped the whole time, and the bark was way better. Anyone else skip the wrap now?

Right, "a lot of fuss over meat" is exactly it. I did the same thing for years, @blairc90, stressing about what to cook. Now I just grab whatever chicken or beef is on sale and roast it with salt and pepper, and it's fine.

Yeah, I get what @max223 is saying. I used to overthink dinner choices too. What helped me was just picking one simple recipe for the week, like baked chicken with frozen veggies. Did that for a month and the stress just went away. Now I don't even think about it, I just cook.
