I finally tried the 'wrap in butcher paper' method for brisket after calling it a gimmick for years

Did a side-by-side test in my Oklahoma Joe last weekend and the wrapped one was way more tender without getting mushy like foil does. Anyone have a good butcher paper brand that doesn't tear easy?

I've been using the pink paper from Academy Sports for about two years now. What internal temp did you pull it at before you wrapped it? I find that makes a bigger difference than the brand. My last roll had a weird wax coating that messed with the bark.

Pulled mine at 165 and the bark turned out fine.

Check the wax coating on your paper first.
