I heard a kid at a cookoff ask his dad why they didn't just use a pellet grill

We were at the Blue Ridge BBQ Festival last month, and this young boy, maybe 10, was watching his dad tend a big offset smoker. He asked why they didn't just get a pellet grill so they could sleep. His dad said, 'Because then I'd miss the sunrise.' It made me think about how the craft has gotten so focused on convenience. I miss when the smoke and the watch were just part of the deal. Does anyone else feel like the 'pitmaster' part is getting lost sometimes?

I mean, I get the romance of it, but that watch is a luxury not everyone has. My neighbor works nights, and his pellet grill is the only way his family gets his brisket on Sundays. Sometimes the craft is just getting good food to the people you care about, however you can.

It's about being there for the whole quiet morning, the fire needing you. Makes you wonder what else we trade for a little extra sleep.

That watch isn't really a luxury though. It's a choice, like the dad said. Some people just choose the sunrise over the sleep.
