I thought wrapping brisket was cheating until I saw a guy in Lockhart do it with butcher paper and a spray bottle.

Man, same here! I was a total no-wrap purist for years. Then my buddy in Austin showed me his method with the pink paper and a little spritz of apple cider vinegar. The bark stays way better than with foil, it doesn't get soggy. Totally changed my game, lol.
