I tried wrapping a brisket in peach paper after 4 hours instead of foil and the bark was way softer than I wanted.

I mean, maybe it's just me but I learned you gotta push that wrap time later if you want that real crunch, has anyone else had this happen with paper?

Yeah, paper breathes more than foil so it won't lock in the steam as much, but four hours is still pretty early. Gotta wait for that bark to really set up dark and firm before you even think about wrapping.

Four hours? Man, that's like wrapping a steak after 30 seconds on the grill. Might as well just boil it at that point.
