My brisket probe gave me a false reading and I almost pulled it way too early yesterday.

Ugh that's the WORST feeling, when you get all excited it's done and then realize the probe lied. I've started doing the old school poke test with a skewer as a backup check, feels like jabbing a stick into warm butter when it's truly ready. Those probes can get weird if they touch a fat pocket or bone. Honestly after one too many close calls I just plan for a longer rest now, gives you a buffer if it needs more time.

One too many close calls" seems a bit dramatic for some undercooked meat. It's just dinner, not a bomb defusal. So you have to wait another twenty minutes while it goes back in, big deal. I've eaten slightly pink chicken once and lived to tell the tale. People act like a thermometer glitch is a full blown kitchen emergency.
