Noticed a huge difference in my brisket after switching fuel sources
I've been using standard charcoal for years, but last month I tried oak wood splits in my offset smoker for the first time. The bark came out way darker and crunchier, and the smoke ring was deeper than anything I got with briquettes. Has anyone else seen a big change like this from just changing your fuel?

Man @aaronsullivan, yeah you gotta adjust your air control too cause oak burns way different than briquettes. I run hot and fast with oak and watch my dampers like a hawk to keep the bark from turning to ash.

Oh man, that's wild. Was it just the type of wood that made that much of a difference, or did you have to totally change how you managed your fire temp and airflow too?
