Rainy Sunday cook in Kansas City turned my whole brisket game around
Had a 14 hour cook last Sunday and it poured the entire time. My offset smoker fought me all day, temps swinging from 210 to 285 no matter what I did with the vents. Around hour 9 I finally said screw it and wrapped it in butcher paper way earlier than I normally would. That brisket came out the most tender one I've ever made, like the rain forced me to stop babysitting the fire and just let it ride. Has anyone else had a bad weather day that accidentally made their best cook?
