Ran into a pitmaster at a gas station in Memphis who changed my brisket trim
He was just grabbing a soda, but he saw my cooler and asked if I was competing. When I said yes, he pointed at my packer and said, 'You're leaving too much on the cap, that's your money.' I shaved another quarter inch off the fat and took 3rd place. Anyone else get a random tip that actually worked?
