Honestly I was so proud of my brisket after 9 hours on my offset. Then this guy in a stained apron walks by, points at the flat, and says 'son, that bark looks like tar, you're choking the smoke.' I was ready to argue but he pulled out a knife and showed me where the ring stopped. Took his advice, cut my wood chunks in half and opened the exhaust wider. Night and day. Anyone else had a random stranger give them a tip that actually fixed their cook?
