TIL my offset smoker was running 40 degrees hot at the stack, not the grate
Grabbed a $6 oven thermometer at a yard sale in Tulsa and clipped it to the grate. Turns out the lid gauge was lying to me for months, and my briskets were cooking way faster than I thought. Anyone else run a second thermometer just to check their built-in one?
Bro it's a $6 thermometer from a yard sale, not a lab grade probe. Those things can be off by 20 degrees themselves. Lid gauges are known to be trash but swapping one sketchy reading for another doesn't really prove much.
