Can we talk about the 'fermentation bar' I saw in a restaurant in Austin last weekend

They had a whole counter with jars of stuff bubbling away, but the staff couldn't tell me what was in half of them or how long they'd been going, which just seems like a big red flag for a place charging $18 for a plate of pickles.

Used to think if nobody saw it, what was even the point of trying to be decent. But that guy chasing down the wallet owner really hit me. The act itself is the whole point like you said.

Saw a guy pick up a dropped wallet at the grocery store and chase down the owner. The owner never even noticed it was gone. That guy did it anyway. Feels like most good stuff happens in the dark. Holding a door for someone glued to their phone, putting a stray cart back. The point is the act itself, not the credit.
