My neighbor in Portland gave me a jar of his kimchi that was 6 months old

I was helping him move some furniture last fall and he just handed it to me from the back of his fridge. He said, 'This one's got some real character now, it's not just spicy, it's deep.' I tried it and it was totally different from the 2-week stuff I make, way more sour and funky. It made me realize I've been stopping my ferments way too early. Has anyone else tried letting a ferment go for that long on purpose?

Real character" is a nice way to say it's alive lol

So being alive is the bare minimum now, like showing up to work on time. Guess my houseplant is a real character then, it's got a whole backstory of near death experiences. Miles out here setting the bar so low you could trip over it. A real character needs more than a pulse, it needs a reason for that pulse. Otherwise we're just talking about zombies with better manners.

Nah, it's more like a real character has history and choices. Being alive is just the baseline.
