Pro tip: My sauerkraut finally didn't mold, and it's cool how fermentation is catching on in my town.

It's funny how often we circle back to old skills and call them new trends. Fermentation is just the latest basic thing getting a fancy makeover with new recipes. You see the same cycle with gardening, mending clothes, or baking bread.

Referencing fermentation catching on in your town, it feels like that's been a thing for a while now in a lot of places. The basics of fermenting veggies have been mainstream DIY knowledge for a good decade. Calling it a new trend now kinda misses how established it already is.

But what if the basics being known isn't the same as something being fully explored? The real trend now is how people are pushing those basics into weird new territory with different flavors and methods. So it can feel new again even if the roots are old.

Look at all the new ferments popping up now though, like hot sauce or fruit shrubs. The basics might be old news but people keep finding wild new uses for it. Feels fresh again when you see what everyone's trying.
