Showerthought: My kraut went from a 3-day ferment in a bowl with a plate on top to a 6-week project in a proper crock after a batch molded in my Houston kitchen last July.
What's the longest you've let a vegetable ferment go, and did the flavor change much after the first month?

My Houston garage saw a jar of pickled green beans for almost five months once. At that point, the flavor wasn't so much "changed" as it was a full-on vinegar assault that could strip paint. It taught me that some projects, like some house guests, really overstay their welcome.
